Maytag Blue Cow’s milk from Iowa. Smooth and soft fondant like texture that coats the palette. Peppery, sweet and nutty with piquant flavor increasing with age.
Huntsman The marriage of two british classics, mild, creamy, and dense. Double gloucester, mellow and firm, and blue stilton, piquant and creamy. Two cheeses in one.
Goat Cheese Log 4 oz. log, mild with a fresh goat’s milk flavor.
Aged Guoda Cow’s milk, semi hard with a solid buttery feel and a hint of molten honey to caramel overtones with some butterscotch.
Roquefort Sheep’s milk, soft and creamy with an intense complexity of spicy salt flavor with a hint of minerals.
St. Andre Cows milk, very big buttery flavor, rich, creamy, silky, with a slight saltiness and a hint of mushroom in the finish.
Manchego Sheep milk. Aged 6 months. Firm and mild with a full, slightly briny, nutty, slightly piquant with dried hay after notes.
Campo Di Montaban Sheep, goat, and cow milk. Semi firm with many tiny eyes throughout. Rich and buttery, tangy and nutty, finishes with a perfect fruity balance.
Rustico with Red Peppercorn Sheep milk, semi firm, creamy texture with a mild balance flavor. Finishing with a mild hint of pepperoncino.
