A brief history of Rubio’s
Rubio’s restaurant was established in 1893 when some friends decided to pool their resources together and launch a taco restaurant. From the beginning, it was meant to serve tacos and it has maintained that principle even becoming more popular for it. After having fish tacos at a local stand, one of the founders came up with the idea of starting a similar restaurant which he sold to his friends who joined forces with him. This led to the first restaurant being opened in around the Pacific beach in San Diego. The restaurant made fish tacos popular around San Diego, something that brought it profitability and in turn the success of the restaurant.
They now have over 200 restaurants in other regions including Arizona and California. With the success came many challenges including lawsuits such as the one in 2005 where it was claimed that they were offering the wrong type of lobster. The restaurant subsequently changed the name of its lobster and made it less popular on the menu. Like the owner of the restaurant which has remained steady since it was founded, Rubio’s menu prices have also been stable over the years only changing to match the changing ingredients.

Rubio’s has been known to use healthy ingredients that don’t compromise the nutritional value of the food. Their salads including guacamole are handmade, and their salsa is made in the restaurant. Other ingredients including their meat and poultry are naturally grown ensuring you get the best end product.
