Each caviar varies in some way: size, color, style, country of origin; and of course, taste. Malossol means little salt. Sturgeon may come from almost anywhere, and the caviar will be much the same. Among the least known dessert wines of the world are the Muscatel de Setubals (pronounced se TOO bal) of Portugal. Grown and made in sandy soils ?t almost only forcactus, these wines improve with age for a hundred years and more, becoming dark red, mellow, and elegant. They seem to lead dual lives. When young, they have strong acidity and medium fruit, and make nice table wines. But because they are high in alcohol, they take a long time to age, and become sweeter, fruitier, and fuller as they get older. The best (and oldest) are indeed very good. |
